Each option is satisfactorily explained in the dialog box. The better security you use the
longer the formatting process, so keep that in mind if time is a factor.

Restore
The Restore tab allows you to
copy or restore a disk or disk
image to another disk. Select
the disk or disk image you want
to copy or restore, choose a
destination disk to be copied
or restored to, and then click
Restore.

Use Disc Utility to Erase Rewriteable CDs and DVDs
Using rewriteable CDs and DVDs (aka CD-RWs and DVD-RWs) is a great way to temporarily
store data. ???Regular??? CDs and DVDs can be written to only once, while CD-RWs and DVDRWs
can be rewritten to multiple times. You use Disk Utility to erase these disks so that you can
reuse them.
Insert a rewriteable CD or DVD into the Mac and then click the CD/DVD drive in the
sources list to see the erase functions.
